
Boil 500g of UHT heavy cream in a pot until it is boiled. Then put 1000g of dark chocolate in the pot and stir and beat to melt it evenly. Then sit until the liquid mixture becomes lukewarm, somewhere between 10C and 15C. Here's a photo:

Let's call this mixture "Ingredient A".
NOTE: This mixture MUST be between 10C and 15C in temperature before you do anything further with it!
